  • Do you have to pay a deposit to hold the date? If so, how much is it and what does it cover?
  • What’s the cancellation policy? Is the deposit refundable?
  • Do the staff and servers receive a flat gratuity? Is that number in the contract?
  • Does the cost cover just the food, or does it include utensils, dishes and glassware rental, too?
  • Does the per-person cost include the service staff and cleanup?
  • Are sales taxes included in the contract?
  • Can you arrange for a tasting at which you try some options for each course of the meal, the cake and the wine and champagne?
  • Can they accommodate dietary restrictions if guests have any?
  • Do they require any special kitchen arrangements?
  • Do they have any other events or weddings the same day or weekend?
  • Do they provide a children’s meal? If so, is there a reduced cost per person?
  • Do they provide a less expensive meal option for the band, DJ, photographers and videographers?
  • Can they provide a bartender? If so, what are the charges?
  • Do they have insurance? If so what does the insurance cover?
  • Will a catering manager be on site during the reception? If so, do they charge an additional fee?
  • Can they give you a final per-person estimate if they know the details of the reception, such as the time of day, location and number of guests?
  • If you have a list of certain foods you absolutely don’t want, can the caterer comply?
  • Is there an additional fee for staff overtime?
  • What’s the ratio of servers to guests?

For many people, German food often conjures up images of sauerkraut and boiled pork roasts rather than barbecue. However, like most cooking traditions, German cuisine began long ago on an open flame. One of their greatest contributions to the world includes smoked and grilled sausages. Now, I know that the Germans didn’t invent sausage, but when we talk about Germany, we have to at least mention it.

Immigrant Influence: When I think of German food, I think of Texas. Why Texas, you ask? Well if you fly into San Antonio and take your rental car north about 20 minutes (depending on traffic, of course), you will find the little town of New Braunfels. This is a German inspired town. In the early days of the Republic, Sam Houston needed a source of population for his new country, so he appealed to German immigrants. These immigrants began settling throughout Texas preserving most of their culture, resulting in German style cooking within Texas.

Brisket: Most importantly, the Germans brought us Brisket. Brisket was considered a worthless cut of meat in the United States and usually ground up for chili or stew. The old German tradition placed tough brisket in a Dutch oven to cook low and slow until tender. It wasn’t until the 1950′s when a couple of German butchers put a brisket in a smoker to make modern Texas Barbecue.

The great thing about ordering food in restaurants in New Braunfels and Fredericksburg, is that you can get a plate of BBQ ribs, German sausage, potato salad, and baked beans without knowing which is Texan and which is German. Fredericksburg (west of Austin by 100 miles or so), used to be a German speaking town. Now, with the exception of a few German cultural festivals, these places are all American…sorry, Texan.

2 – Tell us what you want - Turkeys 14-16 lb. (only size we have – also best efficiency) are 40 each.  Turkey Breasts are 10 lb. – all meat, no bones – 40 each.  Pork Shoulders (like a ham, but from the front) – 40 each.

3 – Pick up - your Smoked bird or Shoulder Wednesday, between 4pm and 6pm (that’s when they’ll be ready) – at our RE/MAX office.

it’s Smoked Turkey time in Danville, Kentucky!

In the meantime while we build up to that size  :-) (Mr Greenberg smokes 200,000+ turkeys every year)  Cindy and I will be smoking turkeys for your Smoked Turkey holiday tradition.

We start with a 12-16 pound bird, brine them, inject them with our secret herbs and spices and smoke them over Hickory for 9 hrs.

Our turkeys must be picked up in Danville, KY right out of the smoker (we currently have no place to store a buncha birds), then you’ll know they are fresh.

I bet you can’t drive home with these smoked turkeys without nibbling.  Smelling that aroma in the car is amazing.
